If you’re craving a tasty tomatoe recipe, or perhaps looking for a light and delicious summer seasonal side dish then Tomatoes Graintee may be one for you.
The main ingredients include small yellow and red tomatoes, Gruyère cheese, and a small Idaho potato.
Despite it being July, I wasn’t able to find small yellow tomatoes. But I was able to find these yellow Heirloom tomatoes, which I cut into slices per the recipe. For the red tomatoes, I cut the larger of the small ones into halves and then left the smaller fruit just as they were. These necessary changes did not seem to impact the final dish.

This recipe, found on page 213, indicates it serves 4. I used a 8 x 8 pan. Depending on portion sizes I would say it could offer either 4 or 6 servings.
I found the recipe easy and quick to put together. Baking time was 20-25 minutes in a 400 degree oven.

A box grater is needed for use with both the Gruyere cheese and the Idaho potato. Ground nutmeg adds a subtle layer of flavour to this topping.
