Emma Coburn’s Pumpkin Spice Muffins

Nothing beats a good muffin! And this recipe is just that, plus its a health conscious one. Ingredients are easily found on store shelves, though I’m sure you will have all of them already in your pantry.

Vegetable Oil, Eggs and Sour Cream

This is an easy recipe to follow and even quicker to assemble. Muffins baked in a 350 degree oven for the 25-30 recommended minutes.

Canned Pure Pumpkin

Would I recommend this recipe (and the cookbook)? Yes.

I altered the recipe slightly by adding in some chopped walnuts. Baking time didn’t see to be affected.
