Good Sunday evening friends.
In between NFL post season games today I felt motivated to make these gorgeous muffins.
Truth be told, my motivation was powered by my desire to not let the balance of a litre of buttermilk currently residing in my fridge go to waste.
Like all muffin recipes I’ve made this was one was easy peasy.
You can find the recipe on page 5 of The Amish Cook’s Family Favorite Recipes, by Lovina Eicher with Kevin Williams. This is the first recipe I’ve made from this book.
I used two different muffin pans. Both were sprayed with a cooking spray. You can see from the photo at the top I used a muffin pan that mimics rosebuds, the second muffin pan is for extra large muffins. The recipe made 12 of the rosebud muffins and 4 of the extra large muffins.
Not wanting the extra sugar and for ease of storage I opted not to make the glaze.
After fully cooling the muffins I bagged the smaller rosebud muffins and tucked them into the freezer for future enjoyment. The larger muffins are ready to be taken to work with me on Monday so I can enjoy them during the week.
